Production method
Production in the 'rhum agricole' style from sugarcane juice (first pressing). For its different ranges Saint Aubin uses both traditional pot still (coeur de chauffe) and copper column stills; in subsequent stages the 'heart' of the distillation is selected and the spirit is diluted with demineralised, treated water to reach the desired strength.

Ageing
Aging in barrels for aged/VSOP/XO expressions; some bottles are finished in ex-Cognac casks for particular finishes.
