Production method
Varies by release: many raicillas and agave spirits are produced in small batches using traditional methods (cooking in traditional ovens, spontaneous fermentation in vats, double distillation in traditional stills such as copper or local containers). Some tequila expressions linked to the project are produced with a more industrial approach (cooking/juice extraction in diffuser/autoclave, fermentation in stainless steel and column distillation).
Distillation
Double distillation for many artisanal expressions; use of traditional stills (copper, wood, ceramic) for some cuvées; for certain project tequilas fermentation in stainless steel/autoclave and column distillation are used.
Ageing
Variable: many raicillas and agave spirits are presented very young (unaged); some reposado-style references or selected distillates receive a short wood maturation.
Producer history Vecinidad
Vecindad was launched as a project developed by Destilería Santa Sabia to bring together, process and market small productions of agave distillates made by maestros and local producers in the mountains and along the coast of Jalisco. Commercial and producer sources indicate the project started around the late 2010s and is managed as a collection of small-batch, often limited-edition releases.
Production philosophy
The brand aims to promote the biodiversity of local agaves and the stories of the communities that cultivate them: many labels bear the names of families or individual producers. The project combines respect for traditional artisanal methods, protection of local supply chains and the option to use more technological methods for certain releases (depending on the type of spirit).

Mexico — mainly Jalisco (Tequila Valley and mountainous and coastal areas of Jalisco); some cuvées also come from Nayarit and Colima. Localities cited on product sheets include Las Canoas, Mascota and other centers in Jalisco.
