Production method

Traditional winemaking with hand harvesting for Marsala grapes; Marsala is fortified by adding wine alcohol (and sometimes mistella and mosto cotto), followed by long aging periods in wood. For the Zibibbo liquoroso a limited maceration is carried out, fermentation at controlled temperature and addition of wine distillate to stop fermentation and preserve residual sugars.

Ageing

Aging in large wooden casks and barriques (for aged Marsala), with variable refinement periods (e.g. Riserva 10 years, Riserva Storica 20 years). Some fortified wines like the Zibibbo undergo short ageing in stainless steel.
