The Barbaresco DOCG of Cà del Baio is born in one of the most famous areas of Piedmont, a land suited for the cultivation of Nebbiolo, the flagship grape of this renowned territory. The vineyards overlook gentle hills, exposed to an ideal microclimate that favors the optimal ripening of the grapes, allowing the complexity and finesse typical of Barbaresco to be best expressed.
This wine stands out for careful aging, which generally involves a long period in wooden barrels, giving structure and refinement without ever overpowering the elegance of the fruit. In the glass, it offers a broad and deep bouquet, intertwining scents of withered rose, cherry, aromatic herbs, and a delicate spiciness of licorice and tobacco. On the palate, it is harmonious, with velvety tannins and persistence that invites continued tasting.
The Barbaresco Asili of Cà del Baio is ideal to accompany rich and structured dishes of Piedmontese cuisine, such as braised meats, roasts, and aged cheeses, enhancing every single nuance of flavor with its complexity and balance.
