The Banyuls Grand Cru Baillaury from Abbe Rous is a fortified wine from the South of France, specifically from the Roussillon region. Fascinating and complex, this wine is primarily created with Grenache grapes, which are left to overripen on the trees to increase their sugar concentration. After fermentation, the wine undergoes a fortification process followed by aging for at least 30 months in oak barrels, which contributes to developing its deep layers of aromas and flavors.



In the glass, the Banyuls Baillaury reveals an intense ruby red color with amber reflections. On the nose, it offers a rich bouquet of dark chocolate, dried plums, coffee, and sweet spices like cinnamon and vanilla. On the palate, it is enveloping and velvety, highlighting flavors consistent with the nose, enriched by a touch of walnut and candied orange, leading towards a persistent and harmonious finish.



Ideal as a meditation wine, it pairs perfectly with chocolate desserts, aged cheeses, or on its own as a post-meal drink. A wine that offers an overwhelming oenological experience, celebrating the winemaking tradition of Banyuls.

Winery history
The winery is named after Abbot François Rous, a local historical figure remembered for his role in the Banyuls wine trade and for contributing to the funding of parish works. The current organisation operates as a cooperative cellar, formed from an association of local cellars and organised to promote the wines of the Costa Vermeille; it is historically linked to the development of vinification practices and the ageing typical of Banyuls.
Production philosophy
It combines respect for local traditions with quality control: attention to the terroir, winemaking practices tailored to the local AOPs and ageing techniques specific to oxidative wines. The winery also promotes agricultural practices oriented towards integrated pest management.
Terroir and vineyards
Banyuls-sur-Mer and the Costa Vermeille, at the foot of the Pyrenees on the Mediterranean Sea: terraced vineyards on schist soils exposed to sun and the Tramontana wind, a landscape that defines the style of Collioure and Banyuls.
