The winemaking is aimed at preserving the freshness and aromatic intensity of the Barbera grapes, with a maceration that extracts color and flavors without exceeding tannins. A refinement follows which, depending on the production choices and the vintage, can include variable periods in steel tanks or oak barriques, in order to enrich the wine with further aromatic nuances while keeping its liveliness intact.

Winery history
The estate is housed in an 18th-century noble palace. The Stupino family began modern operations in the 1960s and has owned the Castello since 1964; over time it has reorganized historic vineyards and renovated the cellars. Among the most frequently mentioned company developments are the enhancement of the Santo Stefano vineyard and the opening, in 2016, of “La Casetta del Castello” as a space for tours and tastings.
Production philosophy
It combines traditional roots with a modern approach: emphasis on the terroir and individual vineyards, separate vinifications for the finest parcels, use of the historic cellar for oak aging alongside modern technical facilities, and sustainability-oriented practices.

Located in the municipality of Neive, in the heart of the Langhe, the estate benefits from historic vineyards including Santo Stefano, Gallina, Messoirano, Montebertotto, i Cortini, Marcorino, Basarin and Valtorta. The Santo Stefano vineyard is often noted for its distinctive exposure and microclimate and is mapped in the estate's historical records.
