This Barbera di Appassimento produced by the Ricossa family, follows a well-defined production process .  After careful selection in the vineyard, the grapes are harvested manually and delicately arranged in small 5kg crates. They are left to rest for about 4-6 weeks in a dry environment at a controlled temperature using special fans. After the grapes are dried in stainless steel tanks at a controlled temperature of 28-30°C for 10-12 days, maceration on the skins follows. The élevage takes place in stainless steel tanks for 6 months, followed by a minimum of 2 months in the bottle.

In the glass it shows a red color intense. The bouquet is rich, characterized by aromas of red fruit, gently intersected with hints of red jam and a woody note.

In the mouth, it immediately conquers for its velvety and sweet taste, a balanced wine that has the typical acidity of the vine. An elegant red, with soft tannins that help give a pleasant structure, which is an excellent wine to pair with dishes based on grilled red meats, roasts, game, soups and well-seasoned cheese platters, with a long finish to discover .

Winery history
The brand's roots lie in the Asti area: the family has origins linked to a distillery dating back to the late 19th century, and the Ricossa name has been known since the early 20th century. The modern production identity has been consolidated around Tenuta Ca' dei Mandorli, with a new winery and the development of a collection of classic Piedmontese wines over recent decades, and a relaunch of the brand beginning in the last decade with integration into the Argea/Mondodelvino group.
