Barsac AOC - Chateau Simon is a fine example of sweet wine produced in the Barsac appellation, part of the Bordeaux region in France, famous for its sweet white wines of extraordinary quality. This specific area stands out for its microclimate and unique soil, which allow the development of "Botrytis cinerea", also known as noble rot, which contributes to the concentration of sugars and aromas in the grapes, creating wines of a complexity and unparalleled depths.

The Barsac AOC by Chateau Simon is perfect for special occasions or to savor this exceptional wine in small quantities, maintaining freshness and quality. Produced mainly with Sémillon grapes, accompanied by Sauvignon Blanc and Muscadelle, this wine reflects the attention and care that Chateau Simon dedicates to the production of each of its bottles.

At sight, the wine presents a brilliant golden color, a sign of its richness and maturity. On the nose, Chateau Simon's Barsac AOC offers an intense aromatic bouquet, with notes of candied fruit, honey, dried apricot and nuances of sweet spices and flowers, enriched by a background of minerality that adds elegance to the olfactory profile.

In the mouth, the wine reveals an extraordinary sweetness balanced by a lively acidity, which guarantees freshness and drinkability. The flavor palette is in perfect harmony with the nose, evolving towards a long and persistent finish, characterized by a pleasant complexity and an aftertaste that invites another sip.

Perfect as an aperitif, Chateau Simon's Barsac AOC pairs beautifully with foie gras, blue cheeses, fruit-based desserts or leavened pastry desserts, enhancing each combination with its aromatic richness and elegant sweetness.
