The "Sole e Vento" is mainly produced from a blend of Grillo and Zibibbo. The Zibibbo vineyards in Pantelleria are 28 years old and grow on volcanic soils, while those of Grillo in Marsala are younger, 20 years old and are found on calcareous-sandy soils. In the cellar, the process begins with a short cold maceration, followed by spontaneous alcoholic fermentation and a 7-month aging period in steel tanks.

The wine appears in the glass with an intense straw yellow color. The perfume is a harmonious fusion of the distinctive characteristics of the respective areas of origin of the grape. Salty and burnt wheat scents mix with the fruity generosity of Zibibbo, with notes of apricot and lemon.
