Le uve vengono interamente raccolte a mano, a perfetta maturazione. In breve tempo giungono in cantina dove l’acino viene separato dal raspo, poi lasciate fermentare e quindi macerare per circa 20 giorni. Dopo la svinatura il vino viene fatto maturare per circa 35 – 36 mesi in botticelle di rovere francese, poi 10 mesi in bottiglia.

Colore rosso rubino intenso, tendente al violaceo, ricco di tannini nobili e morbidi. Al gusto è caratterizzato da ampie spezie con aromi corrispondenti di grande intensità.

Adatto per tagli pregiati alla brace, cacciagione e selvaggina, tartufo. Ideale per essere degustato anche come vino da meditazione.
