Aging in oak barrels imparts complexity and harmony, leaving room for a refined balance between fruity freshness and warm, enveloping notes of wood, vanilla, and sweet spices. On the nose, it is elegant, with hints of ripe apple, candied citrus, and a light floral touch that preludes a broad, vibrant, and smooth palate, with a long and pleasant persistence inviting contemplation.
Perfect for contemplative tastings, this Calvados pairs wonderfully with aged cheeses or desserts based on apple and cream, enhancing the versatility of this unique distillate, a genuine expression of the cultural and gastronomic heritage of Normandy.

Distillation
Double distillation in a 2,500 L repasse pot still; first distillation to obtain the 'petites eaux' (~30°), second distillation to ~70°, with heads and tails cuts calibrated according to the quality of the cider.
Ageing
Aging primarily in small French oak barrels (many reused casks) that promote pronounced wood–air exchange; use of barrels previously used for Sherry, Port and Banyuls to add color and complexity; racking and blending carried out in larger casks when necessary.
