On the palate, it is rich and harmonious, with a balance between fruity freshness and softness given by the long aging, resulting in a long and pleasant persistence. The velvety structure makes it suitable for multiple occasions, from pure tasting at room temperature to use in cocktails with an elegant character.
Perfect as a digestif after important meals, it pairs excellently with aged cheeses or apple-based desserts, enhancing flavors with its complex and refined personality. A true tribute to the Norman territory and the French distilling tradition.

Distillation
Double distillation in a 2,500 L repasse pot still; first distillation to obtain the 'petites eaux' (~30°), second distillation to ~70°, with heads and tails cuts calibrated according to the quality of the cider.
Ageing
Aging primarily in small French oak barrels (many reused casks) that promote pronounced wood–air exchange; use of barrels previously used for Sherry, Port and Banyuls to add color and complexity; racking and blending carried out in larger casks when necessary.
