Champagne Le Sous Bois - Billecart-Salmon is born in the renowned Champagne region, where vineyards stretch over chalky soils capable of imparting elegance and minerality to the final product. This cru expresses the refined interpretation by the maison of a champagne dedicated to the most selected terroirs, shaped mainly by Pinot Noir, which provides structure and aromatic charm. The vinification method involves prolonged aging on the lees, enriching the olfactory complexity with hints of ripe fruit, bread crust, and light balsamic notes.

In the glass, it presents a very fine and persistent perlage, while on the nose, aromas of white fruits, toasted almonds, and floral hints evolve into an elegant bouquet. The palate is fresh and vibrant, supported by lively acidity that balances a pleasant softness, accompanying each sip to a long and refined finish, typical of the distinctive character of Billecart-Salmon.

Perfect as an aperitif or paired with delicate dishes such as shellfish and sushi, Le Sous Bois is a sublime expression of the denomination, capable of captivating enthusiasts seeking an authentic and powerful champagne.
