Distillation
Double distillation in small discontinuous pot stills (~25 hectolitres); for some crus distillation is carried out on the lees; the 'heart' of the distillation is selected for ageing.
Ageing
Maturation in proprietary French oak casks, with cellar management for long ageing of the eaux-de-vie; different expressions require different ageing periods (for example VSOP up to about 12 years, XO with eaux-de-vie often selected between 11 and 25 years).
