After the manual harvest in October, winemaking involves soft destemming and maceration in contact with the skins at controlled temperatures of 28°C, lasting for approximately 25-30 days. Fermentation takes place at a controlled temperature of 26-28°C, with constant pumping over and punching down to ensure complete extraction. The malolactic fermentation takes place in French oak barrels, followed by an 8-month aging period in large French oak barrels.
On the nose, the wine opens with an aromatic bouquet featuring red berries, such as raspberries, strawberries and blackberries, accompanied by herbaceous notes of mallow, thyme and juniper, combined with mineral sensations. On the palate, the wine manifests itself with great breadth, the tannins are perfectly balanced and the finish stands out for its length and balsamic delicacy. This wine embodies the harmony between aromatic complexity, balanced structure and a finish that promises to delight the senses.
