After the manual harvest of the grapes, a rigorous selection takes place in the cellar before subjecting them to delicate direct pressing. The must is then left to settle at low temperatures for a period of 24 hours. Subsequently, alcoholic fermentation begins in stainless steel tanks, where the wine matures for 10 months on the fine lees. During this period, frequent bâtonnage operations are carried out to ensure optimal refinement.

The result is a wine with a translucent golden color, with a viscous consistency. As for the scent, extraordinary aromas of mint, rosemary, notes of Mediterranean scrub, tobacco, withered chamomile flowers and white pepper emerge. Beneath these complex aromas a subtle mineral note can be glimpsed.

The sip is soft, pleasantly warm and with the usual freshness in the background. The finish is long and balanced, with citrus accents reminiscent of cedar peel.
