This sparkling wine is the result of meticulous selection of Chardonnay and Pinot Nero grapes, cultivated in the winery's vineyards on particularly well-suited land and favored by an ideal microclimate for high-quality viticulture.

The winemaking process is handled with great care: the grapes undergo a first fermentation in stainless steel tanks, while a portion of the Chardonnay ferments in French oak barrels. This is followed by a long maturation period on the lees, which for this vintage lasts over 80 months, imparting extraordinary complexity and a creamy texture.

To the eye, the Cabochon Stellato 2012 presents a bright golden yellow color, animated by a very fine and persistent perlage. On the nose, it is a symphony of aromas: notes of ripe white-fleshed fruit, hints of bread crust and vanilla blend with nuances of almond and dried flowers, indicating impeccable maturation.

Winery history
The estate was established through the commitment of Paolo Rabotti and Paola Rovetta. The family's winemaking activity at Monte Rossa began in 1972. Over time the estate progressively focused its production on Franciacorta sparkling wines, developing cru and reserve selections that have contributed to its national and international visibility.
Production philosophy
The production project focuses on research, experimentation and technology to produce characterful Franciacorta: care of the crus, selective use of fermentations and attention to sustainability in the organization of the new winery.
