After distillation, the Gin June Pera matures for some time in steel tanks, thus preserving its crystalline clarity and vibrant aromaticity. Distillation
Separate maceration of botanical families in grape alcohol, individual distillation of aromatic distillates and blending; infusion of the vine blossom in eau-de-vie and final double distillation of the assembled wash in the 'Lily-Fleur' still (the blossom also passes through a Florentine 'Flo' still).
Ageing
Generally gins are not aged; however there are special expressions (e.g. Nouaison Réserve) that undergo finishing in Cognac casks.
