Before being distilled, the pomace is toasted in the microwave, a great invention by Master Distiller Roberto Castagner. This innovative and significant process allows to obtain a raw material with an immense aromatic value. The passages in the alembic give spirits with particular olfactory notes, of enormous balance and complexity. The refinement is carried out in small barriques for a period that can go from 1 to 10 years. A passage in which the choice of precious cherry and oak woods plays an important role, which enrich the aromatic profile and give elegance to the distillate.
The grappas in Roberto Castagner's peat collection are dedicated to the passionate consumer, for whom grappa represents a real ritual to be savored slowly thanks to its extraordinary aromatic breadth. The distillate is left to rest for about a year in cherry and oak barriques, in this period it acquires softness and roundness, for perfect harmony and balance.
From this union between the vines of the plains and those of the hills, and between different woods, an extremely fascinating amber-colored grappa is born, with fruity aromas of morello cherry and plums, and a round taste capable of leading through a world of sensory nuances.
