The Grappa Papà Marcel Ginepro, produced by Distilleria La Valdotaine, represents a unique sensory experience in the world of Italian grappas. Made in the evocative Valle d’Aosta, this grappa stands out for its distinctive juniper infusion, which gives it an aromatic and enveloping character. The distillate is born from selected pomace, carefully processed according to tradition, and enriched with the intense and balsamic scent of juniper, offering notes of resin, aromatic herbs, and a pleasant Mediterranean freshness.

The result is a soft and persistent grappa, with a perfect balance between alcoholic warmth and the delicacy of the aromas. La Valdôtaine is a mountain distillery in the Aosta Valley (Saint-Marcel) active since 1947, specialized in single-varietal grappa, liqueurs and distilled spirits based on alpine herbs, genepì, alpine gin and farro vodka, produced in small batches using copper stills and local spring waters.

Distillation

Steam distillation in small single-charge copper stills (discontinuous) with use of a vacuum water-bath still for reduced-temperature distillations; separation of heads, heart and tails with slow collection of the distillate.

Ageing

Some grappas are aged in barrique (barrique-matured grappas available in multiple types); other distillates are kept in hermetic containers for stabilization.
