The Grillo Sicilia DOC I Sensi of Abbazia Santa Anastasia is born in the heart of Sicily, a land dedicated and rich in wine-making tradition. This wine has its roots in the Grillo grape variety, typical of the island and famous for its Mediterranean character and the ability to best express the aromas and flavors of the territory.



The aging takes place in steel, thus preserving freshness and aromatic liveliness. On the nose, fruity notes of ripe citrus, green apple, and a delicate mineral hint reminiscent of sea breezes emerge. On the palate, it presents a good structure and a well-balanced harmony between acidity and softness, highlighting a pleasant persistence.

Winery history
The abbey has medieval origins and, after a long period of decline, was restored as an agricultural estate and relais. Beginning in the late 20th century, the property relaunched wine production with the construction of a modern winery; in the ensuing decades it collaborated with renowned oenologists and gained increasing attention from critics and the market.
Production philosophy
The estate approaches winemaking with respect for the ecosystem: it practices organic farming and has begun converting to biodynamic methods, combining traditional techniques with modern winemaking equipment and focusing on expressing the terroir.
Terroir and vineyards
Vineyards located in the Castelbuono area, on the slopes of the Parco delle Madonie, with sea-facing exposure and situated on hilly terrain; the area combines Mediterranean influences with the mountainous character of the Madonie.
