La Blanche BIO by Drouin is a highly refined eau-de-vie, produced exclusively in the lands of Normandy, the cradle of calvados tradition. Made with selected organic apples, this eau-de-vie is a tribute to territorial authenticity and respect for nature.

The distillate is born from a double distillation in a copper still, a technique that grants purity and elegance to the final product. The aging, although brief, enriches La Blanche by Drouin with light fresh and fruity notes, typical of the freshly picked fruit, without leaning towards overly woody or oxidative notes. On the nose, delicate scents of fresh apple, white flowers, and a slightly tart touch inviting to drinking emerge.

On the palate, the softness is supported by a vibrant acidity that enhances the naturalness of this young calvados. La Blanche BIO is perfect as a digestif, but can also harmoniously accompany apple-based desserts, light cakes, or fresh cheeses, perfectly matching convivial atmospheres and moments of pure pleasure.

Maison Drouin is a family-owned producer specializing in Calvados Pays d'Auge. They carry out double distillation of cider in a repasse pot still, produce aged single-vintage bottlings and an experimental line finished in rum and whisky casks; the range is extended with gin and an apple-based aperitif (ABC).

Distillation

Double distillation in a 2,500 L repasse pot still; first distillation to obtain the 'petites eaux' (~30°), second distillation to ~70°, with heads and tails cuts calibrated according to the quality of the cider.

Ageing

Aging primarily in small French oak barrels (many reused casks) that promote pronounced wood–air exchange; use of barrels previously used for Sherry, Port and Banyuls to add color and complexity; racking and blending carried out in larger casks when necessary.
