The Meursault 1er Cru Caillerets by Pillot is born in the heart of Burgundy, in one of the most renowned appellations for the production of elegant and highly refined white wines. The main grape variety is Chardonnay, grown on a terroir rich in limestone marl that provides structure and minerality to the wine.

This Premier Cru stands out for a careful aging process, often carried out in well-selected French oak barrels, which balance the primary freshness with hints of vanilla and toast without overpowering the fruit. On the nose, aromas of white-fleshed fruits, such as apple and pear, emerge, enriched by delicate floral notes and a subtle mineral imprint reminiscent of flint.

On the palate, it is enveloping, with a beautiful harmony between vibrant acidity and softness, guaranteeing a refined and complex persistence. Ideal paired with refined fish dishes, shellfish, or soft cheeses, it represents an excellence to be discovered for those who love great Burgundian whites.

Winery history
The Pillot family has been established in the Côte Chalonnaise for several generations: the company's website records six generations of winegrowers and viticultural activity on these hills for around 150 years. Bottles have been marketed since the 1960s, and the winery, with parts dating to the 18th century, was renovated in the 1990s. Romain and Simon are listed as the current managers, who officially took the reins of the estate in 2024.
Production philosophy
The estate highlights the passing down of family knowledge, a traditional winemaking approach, and meticulous vineyard care to express the character of Mercurey's terroirs. Traditional practices are combined with modern equipment and careful attention to the quality of the vineyard parcels.
