Bibio is produced with 100% Montepulciano grapes from vineyards grown organically, with the Guyot training system. The grapes are harvested towards the first ten days of October and taken to the cellar as soon as possible, here the bunches undergo a soft crushing and destemming. Fermentation takes place at a controlled temperature, in contact with the skins, for about 8 days. The periodic pumping over in the presence of air has the purpose of favoring the extraction of the anthocyanins, these give the characteristic color and the noble tannins which ensure the wine density and longevity Sit then undergoes racking and malolactic fermentation, followed by racking and aging in steel with the fine lees. After bottling in the spring following the harvest, it will still undergo a short refinement before being put on the market.
When poured, it shows a beautiful bright ruby red colour. The olfactory profile is fresh, punctuated by fruity aromas of wild cherry accompanied by light balsamic and spicy notes. THEThe sip is soft, the tannins velvety, a wine full of freshness on the finish.
It is recommended to combine with first courses and second courses of meat. Also excellent with medium-aged cheeses.
