Mount Hermon Indigo comes from vineyards located on the slopes of Mount Hermon, a unique area benefiting from a cool microclimate and mineral-rich soils. This wine is primarily produced with Cabernet Sauvignon grapes, a variety chosen to best express the structure and elegance of the territory. The aging takes place in oak barrels, which give the wine an olfactory complexity and a balanced savoriness. On the nose, it reveals notes of ripe berries, delicate spices, and an herbal accent reminiscent of the Mediterranean scrub. On the palate, the tannic texture is soft yet well-defined, accompanied by a lively freshness that invites one sip after another. Ideal paired with grilled red meats or aged cheeses, Mount Hermon Indigo tells the story of the strength and refined authenticity of the wines from the Hermon region.
