Nocellara is an organic extra virgin olive oil produced in Saracena, in the province of Cosenza, in the Pollino national park, in very limited quantities. A unique oil of its kind that comes from a family with over 50 years of experience, with 100% Nocellara Messinese olives.
The freshly picked olives are immediately processed in the mill, first defoliated and then washed. Then begins the pressing and subsequent kneading through a constant control of the temperatures which in this case must not exceed 22 ° C; this is followed by the extraction of the oil which is first carried out with a centrifuge placed horizontally and then with a vertical separator. The precious liquid green gold is immediately put under nitrogen in stainless steel postures where it decants for a short period and then is packaged.
Complex and intense aromas rise to the nose, with fruity and vegetal notes. On the palate it is delicate but persistent and enveloping, extremely balanced between bitterness, sweetness and spiciness, perfection !! It shows an intense green color with golden hues.
A real guarantee to be used to embellish important fish and meat dishes, or to dress salads and vegetables. The label is a reproduction of a painting by a well-known artist from Saracena: Francesco Gagliardi.
