A bottle of Raboso del Piave DOC 1997 from Casa Roma that tells more than twenty-five years of evolution without losing its personality: the color is still intense, impenetrable toward the center with slight garnet nuances at the rim. On the nose ripe and dried red fruits emerge, notes of plum, cherries preserved in spirit, then sweet tobacco, leather and a balsamic touch that lends depth. On the palate it shows a fresh acidity still lively that balances now-silken tannins; the sip is deep, dry and of good length.

It presents itself as a wine of character to be opened a little in advance or decanted to allow the more complex aromas to unfold; ideal with braises, roasted meats, game and aged cheeses, but it also stands up well to rustic mushroom-based dishes. The finish remains dry and savory, with spicy echoes that invite another taste: a mature Raboso that speaks of craftsmanship and pleasing substance.
