On the nose, it opens with notes of vanilla, toasted wood, and dried fruit, intertwined with spicy hints and a light accent of Mediterranean aromatic herbs. The taste is smooth but intense, with a balance between the sweetness of sugar cane and nuances of cocoa, tobacco, and confectionery. The finish is long, persistent, and warm, ideal for those who prefer a complex and refined rhum.
Perfect to be enjoyed neat or with an ice cube, it can also accompany fine cigars or dark chocolate-based desserts, enhancing the organoleptic characteristics of the distillate. This rhum best expresses the tradition and savoir-faire of the Depaz family, highlighting the Martinican terroir.

Distillation
Rhum agricole: distillation of pure cane juice. The company reports extended fermentation and a slow fractional reduction (around 60 days for some cuvées) followed by a stabilization period in stainless steel tanks before bottling.
Ageing
Aged expressions are matured in selected oak casks; some cuvées are blends of aged rums (e.g. Grande Réserve XO: a blend of rums aged 8–10 years). There are also finishes in ex‑Port casks for the Port Cask Finish line.
