Ripasso della Valpolicella Superiore DOC I Classici Cesari is born in the heart of Valpolicella, a land renowned for its elegant and bold reds. Made primarily with Corvina, Corvinone, and Rondinella grapes, this wine expresses the winemaking tradition of a dedicated territory, thanks to a technique that involves the re-fermentation of Valpolicella on Amarone marc, giving it depth and structure.

The aging, conducted in oak barrels for several months, gives Ripasso I Classici a refined balance between fruity intensity, spicy notes, and soft, enveloping tannins. The bouquet opens with scents of ripe cherry, plum, and hints of vanilla, followed by light traces of almond and tobacco.

Particularly suitable to accompany red meats, roasts, and aged cheeses, this Ripasso represents a perfect synthesis of tradition and modernity. Its structure also makes it ideal for long aging.
