This wine, produced by the historic Conte Vistarino winery, one of the pioneers in the production of quality wines in Lombardy, embodies the passion and innovation that characterize the winery's production philosophy.
Sangue di Giuda "Costiolo" is obtained from a blend of native vines, mainly Croatina and Uva Rara, with possible additions of other local varieties, which contribute to creating the rich aromatic profile and structure of the wine. These vines, grown on the fertile slopes of the Oltrepò Pavese, benefit from a temperate climate and clay and limestone soils, which give the wine intensity of aromas and freshness.
The vinification of "Costiolo" involves controlled fermentation, followed by a natural second fermentation which occurs through the Charmat method, allowing the fruity aromas and typical liveliness of the wine to be kept intact. The result is a sparkling Sangue di Giuda, with a moderate alcohol content and a pleasant residual sugar which enhances its drinkability and convivial character.
Visually, the wine has a brilliant ruby red color, with violet reflections that underline its liveliness. On the nose, "Costiolo" expresses an intense aromatic bouquet, with dominant notes of ripe red fruit, such as cherries and raspberries, enriched by floral nuances and a light spicy scent. The fizziness adds an additional dimension, making the olfactory experience even more inviting.
In the mouth, the wine is sweet but balanced, with a freshness that pleasantly counterpoints the sweetness and soft tannins. The carbonation is delicate but persistent, contributing to a sensation of fullness and satisfaction on the palate. The finish is long and fruity, with a pleasant return of the notes perceived on the nose.
Ideal as a dessert or meditation wine, Conte Vistarino's Sangue di Giuda "Costiolo" pairs beautifully with chocolate desserts, fresh fruit and blue cheeses. It is also perfect to accompany the conviviality of festive and celebratory moments, offering a tasting experience that is both traditional and surprisingly fresh.
