The Sauvignon Sanct Valentin by St. Michael Eppan represents the pinnacle of refinement and varietal expression of one of the most loved and appreciated grape varieties in the international wine scene. This wine stands out for its carefully curated production, originating from the picturesque vineyards located in the Alto Adige region, an area renowned for its capacity to best express the peculiarities of this grape.

The harvest of Sauvignon Sanct Valentin is carried out manually, usually towards the end of September, which allows for the selection of grapes at the right degree of ripeness. After harvesting, the grapes undergo cold maceration for a few hours, followed by fermentation in stainless steel at controlled temperatures, preserving the integrity and freshness of the grape's natural aromas.

The result is a wine with a vibrant straw-yellow color with greenish hues. On the nose, Sauvignon Sanct Valentin opens with intense aromas that recall passion fruit, citrus, and notes of green pepper, typical of Sauvignon Blanc, enriched by mineral nuances and a slight grassy trace. On the palate, it is fresh and persistent, with an excellent balance between acidity and body, culminating in a long and satisfying finish.

Sauvignon Sanct Valentin by St. Michael Eppan is ideal as an aperitif or paired with fish dishes, seafood, and goat cheeses. It is also an excellent companion for dishes from Asian cuisine, thanks to its ability to balance spices and intense flavors.

If you are looking for a wine that embodies elegance and complexity, Sauvignon Sanct Valentin is undoubtedly a winning choice that will surprise even the most demanding connoisseurs.
