The harvest of Sauvignon Sanct Valentin is carried out manually, usually towards the end of September, which allows for the selection of grapes at the right degree of ripeness. After harvesting, the grapes undergo cold maceration for a few hours, followed by fermentation in stainless steel at controlled temperatures, preserving the integrity and freshness of the grape's natural aromas.

The result is a wine with a vibrant straw-yellow color with greenish hues. On the nose, Sauvignon Sanct Valentin opens with intense aromas that recall passion fruit, citrus, and notes of green pepper, typical of Sauvignon Blanc, enriched by mineral nuances and a slight grassy trace. Winery history
Founded as a cooperative winery in 1907, St. Michael‑Eppan has grown to unite hundreds of wine‑growing families and to attain national and international recognition. Since the late 1970s the role of Hans Terzer has helped shift the focus from mass production to quality wines; in recent years the winery has developed flagship ranges such as Appius and The Wine Collection.
