The Manzanilla Papirusa by Lustau is a sublime example of the sherry tradition from the Sanlúcar de Barrameda area, the beating heart of the Jerez denomination. This sherry is produced exclusively with Palomino grapes, grown on sandy soils that give the Manzanilla its characteristic lightness and freshness. The aging method takes place under a layer of flor, a delicate film of yeasts that protects the wine from oxidation and gives that characteristic aromatic texture made of marine notes, almond, and fresh bread.

On the nose, the Papirusa reveals subtle and saline aromas, with hints of aromatic herbs and wildflowers. On the palate, it is dry and fresh, with an impeccable balance between acidity and a slight savoriness that recalls the influence of the ocean. Its evanescent structure makes it extraordinarily versatile in pairing and particularly suitable as an aperitif or accompanying seafood, raw fish, and light tapas. An elegant and faithful interpretation of the Manzanilla style that pays homage to the territory and Lustau’s mastery.
