Produced in one of the most prestigious wineries in the region, renowned for its excellent range of labels, this sparkling wine is the result of a scrupulous selection of grapes coming from the best vineyards in different areas of Trentino: from the Garda area to the mountainous reliefs on the border with Alto Adige up to the terraces of the Val di Cembra. After the harvest, the Chardonnay and Pinot Noir grapes are vinified separately with soft pressing and fermentation in steel vats at a controlled temperature. After a few months of refinement, the base wines are assembled and refermentation takes place in the bottle according to the Classic Method, with a stop sur lattes of at least 24 months.

It represents the ideal sparkling wine for those seeking absolute purity, with a dry sip, without any addition of sugar in the dosage. Visually, it presents a brilliant straw yellow color, enriched by bright greenish reflections, while the perlage stands out for its great finesse and persistence. The olfactory bouquet is fine and complex, with aromas of citrus fruits, apple, peach, melon, bread crust and delicate accents of dried fruit. In the mouth, the wine stands out for its linearity and clarity, with a sip that culminates in a savory finish characterized by great mineral freshness.

Winery history
Founded in the early 1970s by a group of enthusiasts including oenologist Luciano Lunelli, the winery takes its name from the image of the monk associated with the history of sparkling wine. The first cuvée dates back to the 1970s, and since then the winery has established itself in the Trentodoc scene thanks to a production focused on Traditional Method sparkling wines and growth based on quality-driven choices and extended aging.
Production philosophy
Artisanal production with careful attention at every stage of the traditional method: grape selection, meticulous cellar work and long periods of aging on the lees. The approach emphasizes the terroir of Trentino, focusing on elegance, finesse of the perlage and consistent quality rather than on large volumes.
Terroir and vineyards
Vineyards located on the hills between Trento and Lavis, in the mountainous and hilly landscape typical of Trentino. Traditional practices such as the pergola trentina are used in some parcels, and the grapes come from the most suitable areas of the DOC Trento.
