The Valentine di Cà del Baio is an elegant Chardonnay Langhe DOC that embodies the freshness and finesse of the Langhe territory, in Piedmont. Produced with strictly selected Chardonnay grapes, this wine clearly expresses the typical characteristics of an international variety adapted to a unique terroir.

With a bright straw yellow color, the Valentine surprises with its delicate and complex aromas: notes of white-fleshed fruit, such as apple and pear, intertwine with floral scents and pleasant mineral hints that tell of the calcareous-clay vocation of the vineyards. On the palate, it is harmonious, balanced, and creamy, with a savory freshness that invites another sip. The aging, conducted in steel with a brief stay in neutral wood, enhances the natural purity of the grape variety without overwhelming its expression.

Perfect as an aperitif, the Valentine is ideal paired with fish dishes, white meats, and fresh cheeses, thanks to its versatility and pleasant structure that maintains lightness and elegance. A white wine that gracefully tells the story of the Langhe and the character of Cà del Baio.

Winery history
The Grasso family has been connected to these hills for generations: Giuseppe Grasso's arrival in Treiso is documented in 1870, and in the following decades the family progressively selected and vinified individual parcels. In the 1980s and 2000s the winery refined the separation of grapes by cru, and in 2008 introduced experiments with Riesling. The revival and modern visibility of the winery are linked to the work of Giulio Grasso, and today management also involves the family's daughters.
Production philosophy
It favors a sustainable approach to viticulture, eliminating chemical weed control, using cover crops, and prioritizing biodiversity and soil conservation. In the cellar, fermentations with indigenous yeasts are encouraged and the use of sulfites is limited to preserve the character of the vintages and their ageing potential.
Terroir and vineyards
The estate and most of its vineyards are located in Treiso, near Barbaresco and not far from Neive. The estate's vineyards fall within historic crus such as Vallegrande, Asili, Pora, Marcarini, Ferrere and Trestelle; the soils are typically calcareous marls that characterize the Barbaresco area.
