The Valpolicella Ripasso Classico Superiore DOC - Solane - Santi embodies the perfect synthesis between tradition and oenological innovation of Valpolicella, masterfully expressed by the Santi winery. This wine, through the review process, acquires a unique complexity and depth, resulting more structured and intensely aromatic than a Valpolicella Classico. "Solane" refers to the sunny hills where the grapes are grown, an area that gives the wine characteristics of notable elegance and finesse.

Visually, the wine has an intense and deep ruby ​​red color, a sign of its richness. On the nose, the bouquet is an invitation to discover aromas of ripe cherries and plums, enriched by spicy notes and a light touch of vanilla, evidence of the aging in wood which helps to elevate the aromatic complexity without overpowering the freshness of the fruit.

In the mouth it offers an enveloping taste experience, characterized by a harmonious balance between acidity, soft tannins and a velvety structure. The ripasso process, which involves a second fermentation and maceration on the Amarone pomace, gives the wine a full body and intense flavors of ripe fruit, spices and a subtle cocoa aftertaste, culminating in a persistent and satisfying finish.

This Ripasso is particularly suitable for accompanying robust dishes, such as roasts, braised meats, game and mature cheeses, where its complexity and richness can harmonize beautifully with the structure of the food, enhancing its flavours.

Winery history
Cantina Santi was founded as a winery in Illasi and has been present in Valpolicella since the 19th century. During the 20th century the Santi family introduced technical innovations and progressively focused on high-end wines; in 1974 the winery became part of Gruppo Italiano Vini, which reinforced investments and facilities while preserving its local identity.
Production philosophy
Santi claims a style tied to the sense of place of Valpolicella: it favors the predominant use of Corvina in its selections, aging in large traditional casks, and the use of local woods to enhance the aromatic qualities typical of native grape varieties. The approach combines oenological research with respect for local practices.
Terroir and vineyards
Santi's vineyards and selections are concentrated in Val d'Illasi and the classic areas of Valpolicella, using a vineyard-selection approach across different exposures and microclimates to produce wines that reflect the local terroir. The winery also works with vineyards in other Veronese appellations such as Soave, Bardolino and Lugana.
