In appearance, it presents an intense amber color, which anticipates the olfactory and gustatory richness. Distillation
Single, discontinuous distillation in a Frilli-type (hybrid copper) pot still heated by a steam jacket; prolonged spontaneous fermentation (indicated as six days / 7 hl in terracotta amphorae according to official sources).
Ageing
Maturation in Tuscan oak casks that previously held local wines (e.g. Vin Santo, casks used for Super Tuscans) to transfer the wine component to the spirit.
