Young Vines of Thymiopoulos Vineyards is a wine that tells with freshness and liveliness the mountainous territory of Western Macedonia, in Greece. The winery, known for promoting indigenous grape varieties, offers here a young and vibrant label, an expression of the Xinomavro grape, known for its complexity and longevity. The winemaking method aims to preserve the aromatic purity of the must, with a short maceration and aging in steel that highlights fruity notes of unripe cherry, delicate spices, and a pleasant acidity. On the palate it is agile and with soft tannins, with a fresh finish that invites the next sip. Ideal to accompany dishes from the Mediterranean tradition such as white meats, fresh cheeses, and preparations based on aromatic herbs, Young Vines is a sincere window into the character and potential of emerging Greek wines, capable of surprising for its complexity and immediacy.

Winery history
The Thymiopoulos family has been involved in farming and viticulture for generations in the Trilofos area. Apostolos Thymiopoulos, trained in oenology, began bottling the wines of his project with his first release, "Earth and Sky"; since then he has developed a range focused on different expressions of xinomavro, aiming to convey the specificity of each cru.
Production philosophy
The estate adopts sustainability-focused agricultural practices and minimal intervention in the winery: organic farming, selective use of biodynamic practices, and low-intervention vinification to bring out the character of each vineyard and of Xinomavro.
Terroir and vineyards
Vineyards located in Trilofos and Fytia on the slopes of Mount Vermio, in the Naoussa area. The vineyards occupy hilly sites with variable soils and mountain microclimates that influence the freshness and structure of the wines.
