Distillation and production

Production method

Production begins with harvesting and selecting different families of cider apples; the juice is fermented for several months to produce cider and then distilled. For Calvados Pays d'Auge the copper pot still with repasse (double distillation in two phases) is used, while in other areas of the appellation a column still may be employed. After distillation the eaux‑de‑vie rest and mature in oak barrels; the final product is often the result of blends of multiple eaux‑de‑vie.

Distillation

For Calvados Pays d'Auge the copper pot still with repasse and double distillation (first for the brouillis, then for the calvados) is employed; the column still is used for other types of Calvados/AOC. Distillation generally takes place between January and June after a natural fermentation of the cider.

Ageing

Aging in oak barrels in cool, dark cellars; the maître de chai carries out blending to balance different eaux‑de‑vie and occasional finishings/finishes in casks of other wines or spirits are used (e.g. whisky, Sauternes, Port).

Producer history Busnel

Maison Busnel was founded in 1820 by Ernest Busnel. Originally from Pont-l'Évêque, the house developed in subsequent decades thanks to the selection of the best eaux-de-vie and the art of blending, becoming an official supplier to major transatlantic liners in the 20th century. The original facility was destroyed during World War II and rebuilt in 1952; at the end of the 1970s operations moved to Cormeilles (Eure). During the 21st century the Maison expanded its offering while maintaining the Calvados tradition and introducing new expressions such as whisky, gin, vodka and special cask finishes.

Production philosophy

Combining respect for the Norman terroir and the tradition of blending with an open approach to innovation. The house prioritizes the selection of cider apple varieties, maturation in casks and the skill of the maître de chai to achieve balanced aromatic profiles, while also developing experiments (special cask finishes, new local spirits) without losing its regional roots.
