Production method

Starts from local white wines that are fortified (addition of alcohol). This is followed by a period of aging in oak barrels (partly in cellars and, for some expressions, exposed outdoors). Blends of herbs and spices are macerated for several weeks (traditional method indicated as dodinage). For the Original Dry the overall process exceeds 16 months, with separate phases of aging and maceration.

Ageing

Aging in oak barrels: maturation phase in cellar and, for some references, transfer to smaller barrels exposed outdoors (wind, sun and sea air) for a prolonged period; return to the cellar and final blending.

Producer history Noilly Prat

The origins trace back to the activity of Joseph Noilly (early 19th century); the vermouth formula was developed in 1813 and the company evolved in the second half of the century. The maison relocated and developed its facilities in Marseillan (Hérault) where Noilly Prat & Cie was officially established (1855). During the 20th century the range expanded with variants such as Rouge and Ambré; the brand joined the Martini & Rossi family in the 1970s and today is part of Bacardi Limited's portfolio.
