Coupé is an evocative name that has the purpose of referring to an imaginary made of passion and style; in French "Coupé" derives from the verb "couper" which means to cut, a concept that in the field of wine is summarized in the term Cuvée.

The vines used for the production of this Franciacorta are Chardonnay and Pinot Noir; wines obtained from our best crus for 85.5% and reserve wine for 12.5%. After careful selection of the grapes, when they are rightly ripe, they are harvested manually and placed in crates. This is followed by delicate pressing with selection of the best part of the grapes, for no more than 55% of the yield. Each cru is vinified alone. Fermentation takes place for 56% in steel vats at a controlled temperature, and 44% in oak barrels. Bottle aging is for a minimum of 24 months. 

A bubble that in the glass has a bright straw yellow color. On the nose it gives off a seductive and refined bouquet ranging from delicate fruity aromas of white peach to sweet scents of elderflower. In the glass, the aroma evolves, giving the nose vegetable nuances and fresh almonds. It enters the palate with a fresh sip, with a contrasting aroma between creaminess and balance of the perlage evolving towards a balsamic and savory flavor on the finish.

In table lends itself magnificently to accompany first courses seasoned with delicate sauces and dishes based on fish and shellfish.

Winery history
The estate was established through the commitment of Paolo Rabotti and Paola Rovetta. The family's winemaking activity at Monte Rossa began in 1972. Over time the estate progressively focused its production on Franciacorta sparkling wines, developing cru and reserve selections that have contributed to its national and international visibility.
Production philosophy
The production project focuses on research, experimentation and technology to produce characterful Franciacorta: care of the crus, selective use of fermentations and attention to sustainability in the organization of the new winery.
Terroir and vineyards
