More questions
This Aglianico Castel del Monte DOC Biologico from Tenuta Bocca di Lupo appears deep ruby with garnet hues. On the nose it shows notes of dark fruit such as plum and sour cherry, accompanied by earthy tones, Mediterranean herbs and light spice. On the palate it offers structure and tannins that are present yet balanced, with good acidity supporting a medium-full body and leading to a persistent finish of ripe fruit and subtle mineral hints. The flavor profile is composed and linear, suitable for those who enjoy assertive but measured red wines.
Produced from grapes grown under organic standards, it can accompany red meats, roasts, game and aged cheeses, and also suits flavorful pastas like ragù. Serving suggestion: around 16–18 °C; a short aeration by decanting can enhance its aromas. Precise information on harvest and ageing is indicated on the producer's label.

The story
The Tenuta Bocca di Lupo project was launched as an initiative of Tormaresca to rediscover and promote Puglia's native grape varieties. The company website states that the project began in 1998 and has developed over the years to become a point of reference in the Castel del Monte area.
Production philosophy
The estate prioritizes organic vineyard management and a terroir-driven approach to its grape varieties. Its aim is to offer contemporary expressions of local varieties and signature selections, grounding production in the quality of the terroir and in sustainable agricultural practices.
Terroir and vineyards
The estate is located in the Murgia, in the countryside of Minervino Murge, within the Castel del Monte DOC area. The vineyards are cultivated on nutrient‑poor calcareous soils at elevations of around 250–300 meters above sea level, and the landscape is characterized by climatic and soil conditions that favor elegant, well‑defined wines.
