This Armagnac by Dartigalongue reveals in the glass a mature, measured profile: deep amber color with coppery highlights, a bouquet of well-defined dried fruit and toasted notes recalling figs, plums and hazelnuts, supported by hints of vanilla and sweet spices. On the palate it is full yet balanced, the texture is soft and enveloping, with a gentle warmth that does not overpower the finesse of the wood; the delicate tannin and residual sapidity contribute to a long and pleasant finish, showing the elegance of a spirit in which time has harmonized the elements without weighing them down.

It lends itself both to slow contemplation as an after-dinner digestif, served in a tulip glass at room temperature or slightly cool, and to special occasions thanks to the presentation box that enhances its presence on the table or as a gift. Pair it with dark chocolate that is not too bitter, dry biscuits and aged cheeses: you will find that the balance between residual sweetness and oxidative notes opens interesting contrasts without forcing the character of the distillate.

Distillation

Continuous distillation in a column still at low strength; for some ranges the use of traditional artisanal Armagnac pot stills is mentioned.

Ageing

Ageing in Gascon oak barrels (about 400 L); after 40–50 years the best vintages may be transferred to glass demijohns to preserve their character; numbered single cask and limited editions exist.
