This Armagnac XO Signature from the maison Dartigalongue, with a declared aging of between 12 and 20 years, presents a mature, measured character. On the nose it reveals a tapestry of dried fruit and compote, hints of vanilla and sweet spices, while the oak remains well integrated, offering a warm, silky base; on the palate there is a pleasant balance between lingering freshness and restrained alcoholic warmth. The overall impression is one of elegance rather than power, with a softness that invites you to sip.

On the palate the sip is enveloping, full-bodied yet balanced, with rounded tannins and a persistence that recalls stewed plum, toasted hazelnuts and a slight earthy note. It is ideal as a contemplative digestif, pairs well with dark chocolate or aged cheeses and complements desserts made with dried fruit; you can also try it with a small ice cube to further open its aromas, served in a glass that concentrates the scents.

Distillation

Continuous distillation in a column still at low strength; for some ranges the use of traditional artisanal Armagnac pot stills is mentioned.

Ageing

Ageing in Gascon oak barrels (about 400 L); after 40–50 years the best vintages may be transferred to glass demijohns to preserve their character; numbered single cask and limited editions exist.
