The "Bianco di Bianchi" from the Bayamore line by Firriato represents an exemplary selection of white wines sourced from the sunny lands of Sicily. This wine is the result of meticulous grape selection, cultivated using sustainable agriculture methods that fully respect the surrounding environment.

The wine is striking for its brilliant straw-yellow color with greenish reflections. On the nose, it opens with an intensely aromatic bouquet characterized by notes of ripe fruit such as peach and apricot, enriched with hints of citrus and white flowers. These olfactory sensations harmoniously combine with light mineral notes, giving the wine a particular freshness and enviable complexity.

On the palate, the "Bianco di Bianchi - Bayamore - Firriato" is lively and fresh, with a perfect balance between acidity and softness. The rich aromatic palette is also reflected in the taste, with a return of fruity sensations paired with elegant herbaceous notes. The persistence is remarkable, leaving a pleasant sensation of cleanliness and freshness.

Perfect to serve as an aperitif, it pairs excellently with light appetizers, fish dishes, or seafood. It is also ideal with risottos and vegetarian dishes, as this wine enhances delicate flavors without overwhelming them, creating a gustatory balance that always invites another sip.

The "Bianco di Bianchi - Bayamore - Firriato" is an example that demonstrates how respect for the terroir and innovation in winemaking can coexist harmoniously, producing high-quality wines that reflect the soul of the Sicilian territory.

Winery history
Founded as a family project by Salvatore Di Gaetano in the 1980s, Firriato has grown by expanding its presence across multiple estates in Sicily and bringing the island’s wines to international markets. The family has remained actively involved in technical supervision and brand development, over time establishing estates dedicated to production, ampelographic research and hospitality.
Production philosophy
The winery pursues an approach focused on respect for the land: careful selection of soils, promotion of local grape varieties and sustainability-focused agricultural management. Firriato declares the conversion of its vineyards to organic farming and has undertaken initiatives to offset and reduce the company's climate footprint.
Terroir and vineyards
The company's holdings are distributed across several estates that represent different terroirs: the hills of the Agro Trapanese, the slopes of Mount Etna and the maritime viticulture of the island of Favignana. The individual estates mentioned in the sources include Baglio Sorìa, Borgo Guarini, Dàgala Borromeo, Pianoro Cuddìa, Giudeo, Cavanera Etnea and Tenuta di Calamoni in Favignana.
