Production of regional and village/1er Cru cuvées: Burgundy Aligoté, Burgundy Chardonnay, Burgundy Pinot Noir, Chassagne‑Montrachet, Meursault and others. Certified sustainable approach with hand harvesting and barrel aging. Multi-generational family management, most recently under the guidance of Nathalie Bernard and Sébastien Fossier.
Winery history
The Mimeur/Bader family has been tied to the region for centuries: their winegrowing origins date back to the 17th century and, after Charles Mimeur’s 1919 purchase of the vineyards of the Domaine du Château de Chassagne‑Montrachet, the estate expanded through the marriage of the two family branches. During the 20th century the business shifted from trading to a stronger focus on viticulture, and since the end of the last century a gradual program of modernization and bottling has been underway. Management has remained family-run and, in the most recent generation, is carried out by Nathalie Bernard and Sébastien Fossier.
Production philosophy
The winery adopts a terroir- and sustainability-focused approach: sustainable viticulture practices, a ban on herbicides in the described parcels, and HVE certification. Hand harvesting, fermentations with indigenous yeasts, aging in oak barrels and limited cellar interventions to enhance the vineyard’s expression.
Terroir and vineyards
The vineyard covers 8 hectares, divided between Chassagne‑Montrachet and plots in Saint‑Aubin 1er cru. The heart of the estate is the Domaine du Château de Chassagne‑Montrachet on clay‑limestone soils; the estate also owns several small parcels in the aforementioned communes.
