The Etna DOC Bianco Contrada Santo Spirito in Magnum format by Palmento Costanzo is a tribute to the richness and diversity of Etna, one of the most fascinating and unique wine regions in Italy. This white wine comes specifically from the Santo Spirito district, one of the numerous small parcels that dot the slopes of the volcano, each with particular soil and microclimate characteristics that contribute to defining the uniqueness of the wines produced.

Palmento Costanzo, a renowned winery located on the north-eastern slopes of Etna, is dedicated to the production of wines that express the volcanic terroir through the use of careful and sustainable agricultural practices. The company gives great importance to winemaking that respects the integrity of the grapes, in this case a blend of Carricante and Catarratto, native varieties which, in the context of the Santo Spirito district, manage to express an extraordinary aromatic complexity and a marked minerality.

Winemaking takes place with the aim of preserving the freshness and purity of the fruit, using fermentation and maturation in stainless steel containers to maintain the varietal characteristics and the deep connection with the territory unaltered. The Magnum format, equivalent to two standard bottles, is not only a symbol of conviviality and sharing, but also offers optimal conditions for the aging of the wine, allowing it to develop greater complexity and nuances over time.

Visually, the wine has an elegant straw yellow color, with greenish reflections that underline its freshness. On the nose, an intense aromatic palette of white pulp fruit emerges, citrus notes, white flowers and a distinctive mineral vein that recalls the volcanic soil from which it comes. This minerality is accompanied by nuances of aromatic herbs and a light salinity, which add complexity and depth to the bouquet.

In the mouth, Contrada Santo Spirito demonstrates a perfect balance between structure and acidity, with a richness of flavors that faithfully reflect the nose and blend into a long and persistently mineral finish. The texture is round and enveloping, with a lively acidity that gives dynamism and prolonged freshness.

This wine is ideal to accompany rich fish dishes, seafood, vegetable-based appetizers and fresh cheeses. Its elegance and complexity also make it perfect as a meditation wine.

The Etna DOC Bianco Contrada Santo Spirito in Magnum format by Palmento Costanzo represents an excellent example of how the Carricante vine, in synergy with the Catarratto and the particular terroir of Etna, can produce white wines of extraordinary expression, capable of telling the story and the diversity of this volcanic territory.

Winery history
The Costanzo family recovered and restored a historic palmento on the northern slopes of Mount Etna, which they purchased and returned to use in recent years. Today the estate is run by family members assisted by a local technical team. The restoration of the palmento and the acquisition of pre-phylloxera vineyards have guided the estate’s development and a production focused on contrada expressions.
Production philosophy
Enhance the diversity of Etna's contrade through separate vinifications, minimize intervention to preserve the integrity of the fruit, and adopt bio-architecture and sustainability measures in the winery, with selective use of stainless steel, tonneaux and large casks to respect varietal and terroir expression.
Terroir and vineyards
Located in Contrada Santo Spirito, in the Passopisciaro area. Terraced vineyards on volcanic soils, gobelet-trained and supported by dry-stone walls of lava rock, situated mainly between 600 and 800 meters above sea level.
