Passerina IGT "S.Basso" from Cocci Grifoni is an organic white that offers a fresh, straightforward profile. In the glass it shows a bright straw-yellow color with green highlights; on the nose there are notes of citrus, green apple, white flowers and discreet mineral nuances. The palate is marked by lively acidity and a light structure, with a clean finish that evokes salinity more than sweetness. It demonstrates good drinkability, suited to those seeking an immediate but balanced wine.

It pairs well with simply prepared seafood, shellfish, grilled fish dishes and summer salads; it also works as an aperitif. Serve chilled, around 8–10 °C, in a wide glass to enhance the aromas. As an organic product from the producer, it is recommended to consume it young to appreciate its characteristic freshness, preferring straightforward storage without excess.

Winery history
Winery with an official founding date of 1933. Guido Cocci Grifoni rediscovered the Pecorino grape in the 1980s and the first pure Pecorino vinification dates to 1990; since then the estate has helped raise the profile of Pecorino in the Offida appellation.

Family history and management; focus on caring for the land, experimentation (e.g. resistant grape varieties) and hospitality. Emphasis on valorizing native grapes (notably Pecorino) and the vine–human–landscape relationship.
