An elegant wine produced with carefully selected Pinot Noir and Chardonnay grapes grown in the heart of Oltrepò Pavese at about 250 m above sea level. with South/South-West exposure. The vineyards are cared for respecting the canons of Organic Agriculture. The harvest is done manually; in the cellar the bunches undergo a soft pressing with an automatic central lung press for the division of the juice from the skins, with static decanting at 12°C for 28-30 hours. The alcoholic fermentation is activated with selected yeasts at a controlled temperature of no more than 16°C with permanence on the lees for a period of about 40 days, after which it is cooled down to -4°C. This is followed by three months of aging in the bottle before being put on the market.
The White Rose has a straw yellow color with greenish reflections; the nose offers fruity hints of apricot and fresh fruit exquisitely blended with mineral aromas. In the mouth the taste is decidedly balanced, pleasantly soft and refined, with a great structure.
An extremely elegant cuvée, perfect in combination with delicate appetizers and fish-based dishes.
