The Rosso DOP - Salice Salentino Varietali by Paolo Leo is an excellent example of how Puglian winemaking tradition can meet modern excellence. Sourced from the sunny vineyards of Salento, this wine is a celebration of local varietals, primarily Negroamaro and Malvasia Nera.

The Paolo Leo winery, renowned for its dedication to cultivating vines in full respect of local traditions while paying close attention to modern winemaking techniques, presents a Salice Salentino that stands out for its intense roundness and aromatic complexity. The color is a deep ruby red, with reflections that tend towards garnet with aging. The bouquet reveals notes of ripe fruits like plums and cherries, enriched with spicy nuances and a light touch of vanilla, a result of wood aging.

On the palate, the Rosso DOP - Salice Salentino Varietali proves vigorous and well-structured. The balance between soft tannins and fresh acidity leads to a persistent and pleasantly warm finish, inviting another sip. Vinification involves skin maceration to emphasize the varietal character and structure of the wine, followed by controlled fermentation and an aging period in oak barrels that help to smooth out edges and harmonize the aromas.

This wine is an ideal choice to accompany hearty Mediterranean dishes, such as spicy stews, grilled red meats, and mature cheeses. Its versatility also makes it suitable as a meditation wine, to be savored on its own to appreciate every nuance.

A jewel from Salento that emphasizes the winemaking art of Paolo Leo, always respectful of the terroir and the viticultural history of the territory. A true expression of southern Italy in a bottle.
